Ahh, we humans can’t seem to resist meddling in nature’s affairs in the quest for perfection and convenience.

Did you know that modern wheat, which is hybridised to the hilt, has 42 chromosomes versus ancient einkorn which has never been hybridised and contains only 14 chromosomes?  Is it any wonder that fiddling with nature and the whole modern wheat situation is hard to digest?!

Young Living has its own farms and partner farms all around the world, and in the little picturesque part of Provence called Simiane-la-Rotonde, the lavender farm is also home to ancient einkorn which is used as a rotational crop to rest and revive the land after lavender growing every 10 years.  Please take a couple of minutes to watch this video – you’ll even feel more relaxed just by soaking it all up with your eyes!

 

How beautiful that in the process of bringing us the very best quality of lavender possible (that’s true lavender, Lavandula angustifolia), Young Living gets to also bring us a beautiful food product that needs nothing in order to flourish and thrive but sun, rain and love (to quote Nicolas Landel, the French farm manager in Simiane-la-Rotonde).  It goes without saying but we’ll say it anyway that this grain is nonGMO and grown without any kind of interference from herbicides or pesticides.

Traditional farming methods are used to produce einkorn (Triticum monococcum) and it’s a fairly simple process in order to extricate the einkorn berry, as it’s called, from its husk and do the necessary sifting and sorting before converting these little grain berries into stoneground, wholegrain einkorn flour.  Young Living also uses this Gary’s True Grit™ Einkorn Flour to produce several nourishing food products.

Today, we’re combining the healthful benefits of ancient einkorn’s purity integrity with Young Living’s Vitality essential oils – those that are labelled as safe to add to food and drink – to come up with a quick and easy apple crumble recipe, because stewed apples are fabulous for the immune system within our gastrointestinal system and if we can fortify healthy gut microbes with the help of such simple and honest foods as stewed apple and cinnamon, let’s do so!  The Young Living essential oils add a wonderful flavour intensity and extra zing and vitality, along with their own particular energising properties.  Please note that you should only ever add essential oils to food or drink if their label CLEARLY STATES it’s safe to do so!

For this recipe, try leaving a little apple skin on by peeling very roughly and when you’re sure your tummy has adjusted to the pectin in the apple skin, start to increase the amount of skin you include so that you’re getting a good serving of those extra nutrients as well as the apple fruit itself.

young living einkorn apple crumble, the good oil daily

Gary’s True Grit Apple Crumble

Recipe adapted from Donna Hay Prep time: 15 mins  Baking time: 40-45 mins   Serves 6

APPLE MIXTURE INGREDIENTS

  • 5 medium Granny Smith or any red apples, roughly peeled (leave a little skin on), cored and diced into 2cm chunks
  • ¼ cup water
  • ¼ cup Young Living NingXia Red® juice (or a further ¼ cup water)
  • ½ cup Young Living Dried Wolfberries, raisins or sultanas
  • 3 drops Young Living Lemon Vitality/Culinary essential oil
  • 1 drop Young Living Cinnamon Vitality/Culinary essential oil

CRUMBLE TOPPING

  • 2 ½ cups Gary’s True Grit™ Einkorn Flakes Cereal or Gary’s True Grit™ Einkorn Granola
  • OR  1 ½ cups Gary’s True Grit™ Einkorn Flour plus 1 cup organic rolled oats plus ½ cup brown sugar
  • 2 drops Young Living Cinnamon Vitality/Culinary essential oil
  • 225g unsalted butter, melted (or use salted butter if you love a salty/sweet flavour)

METHOD

  1. Preheat oven to 180°C (350°F)
  2. Place the apple mixture ingredients into a large bowl and mix lightly to combine
  3. Transfer to a 1.5-litre ovenproof dish
  4. If using the True Grit Cereal or Granola, give the apple mixture a baking head-start of 20 mins then remove the apple from the oven, spread the crumble topping over (prepared as per steps 5 & 6) and bake for a further 20-25 minutes, making 40-45 minutes total.  If using the Einkorn Flour/sugar/oats combo, prepare and bake per below
  5. Combine the dry ingredients of the crumble topping ingredients in the previously used large bowl (no need for more washing up!)
  6. Make a well, add the melted butter then the Young Living Cinnamon essential oil and mix lightly to combine
  7. Spoon this mixture over the apple mixture and for ease of handling, put the filled ovenproof dish onto a baking tray then place in the oven on the middle shelf
  8. Bake for 40–45 minutes, or until the crumble is golden and the apples are soft and tender
  9. Serve with coconut ice-cream or premium vanilla ice-cream or a big dollop of natural Greek yoghurt for extra digestive pleasure
