Choc Cherry Almond Bread & Butter Pudding with Cinnamon Essential Oil

Recipe adapted from Eating Well

Cooking time: 1 hr 45 mins total (10-15 mins prep plus baking and resting time – can be prepped ahead of baking) 

Serves 8

INGREDIENTS

  • 4 large egg whites
  • 4 large eggs (in addition to the above egg whites)
  • 1 cup unhomogenised organic milk (shake bottle well before pouring)
  • ½ cup raw sugar, coconut sugar or Rapadura, or 1/3 cup Young Living Blue Agave Nectar
  • 1 tsp organic vanilla extract
  • ½ tsp ground cinnamon or 2-3 drops Young Living Cinnamon Bark Vitality™ essential oil (you can also switch this for Young Living Ginger Vitality™ essential oil for a change of flavour scenery)
  • 4 cups grainy bread with half the crusts removed and cut into 2.5cm/1 inch cubes (keeping some crust on adds to the texture and looks beautiful!)
  • 2 cups pitted cherries (fresh or frozen and thawed)  Optional: pre-soak Young Living organic Dried Ningxia Wolfberries overnight in Young Living NingXia Red and replace ¼ cup of pitted cherries with the rehydrated wolfberries
  • ¾ cup dark chocolate cooking chips (small size is ideal or lightly break up larger buttons)
  • ½ cup sliced almonds, lightly toasted in a dry frypan over low-to-medium heat 2-4 mins – ¼ cup of this goes into the pudding, the other half is reserved for the topping

METHOD

  1. Put on your favourite happy music and turn on your Young Living diffuser with Young Living Harmony™ or Joy™
  2. Preheat oven to 190C / 375F
  3. Coat an 11-by-7-inch glass baking dish (or equivalent capacity casserole dish) with butter or olive oil cooking spray
  4. Prepare custard: Whisk egg whites, eggs, milk, Young Living Cinnamon Bark Vitality™ essential oil in a medium bowl
  5. Add sugar/agave nectar, vanilla and cinnamon powder (if using) and whisk to combine
  6. In a large bowl, toss bread, cherries, chocolate chips and 1/4 cup almonds in a large bowl
  7. Add the custard and toss well to coat
  8. Transfer to the prepared baking dish and push down to compact. Cover with foil
  9. Bake until the custard has set, 40 to 45 minutes
  10. Uncover, sprinkle with 1/4 cup almonds and continue baking until the pudding is puffed and golden on top, 15 to 20 minutes more
  11. Transfer to a wire rack and cool for 15 to 20 minutes before serving

To make ahead of time:  prepare the pudding through the end of Step 8; refrigerate overnight. Let stand at room temperature while the oven preheats. Bake as directed in Step 9.
