If all that isn’t enough to have you ordering it now, then today’s recipe will surely get you over the line!  Inspired by a beautifully nourishing and absolutely delicious recipe by Paleo Running Momma, we’ve tweaked a few ingredients to allow you to maximise the vitality and energy by including Young Living’s vibrant lemon essential oil.  Please note that not all essential oils are suitable for using in food and drinks.  Only ever, ever do so when their label clearly states you can do so.  Quality is imperative and even when an essential oil is authentic and guaranteed pure, such as those produced by Young Living, not all oils are meant to go down the hatch!

And now, on with the cooking show.  You’ll have these in the oven after 15 minutes, out of the oven after around 12 minutes (give or take) and cooling for another 10 minutes or so.  Try to resist so they can take on their full chewy consistency, but still-warm bikkies?  Pretty hard to deny.

Diffuse Young Living Lemon essential oil while you’re prepping, baking and tidying up afterwards and you’ll be in the most wonderful mood, for sure!

This recipe is vegan as well as paleo, so it includes flaxseed ‘egg’ instead of a hen’s egg.  Flaxseed ‘eggs’ are very easy to make so I would heartily encourage you to try – but if you’re not following a vegan diet and prefer, you can include an egg yolk instead.  The bikkies won’t spread as much during baking so press them down a little more firmly than you would if using the flaxseed ‘egg’.  Have fun!

Chewy Lemon Essential Oil and Almond Paleo Biscuits

Recipe inspired by Paleo Running Momma

ONE FLAX ‘EGG’ (Make first and allow to sit while prepping the dry ingredients)

  • 1 tblsp flaxseed meal
  • 2 ½ tblsp filtered water

Combine in a small bowl and allow to sit so it thickens to the consistency of a beaten egg.  Easy as can be, hey!

INGREDIENTS

  • 1 serve of flax ‘egg’ (or one egg yolk for non-vegan option)
  • 1 ¼ cup blanched almond flour
  • ¼ cup arrowroot
  • ½ tsp baking soda
  • ¼ tsp sea salt, Himalayan or Celtic salt
  • ¼ cup premium coconut oil in liquid state (melt and cool to appropriate consistency as needed)
  • ¼ cup smooth almond butter
  • ¼ cup Young Living Blue Agave Nectar or top grade maple syrup (not maple flavouring) OR Young Living Gary’s True Grit NingXia Berry Syrup for a berry twist
  • ¼ cup coconut sugar
  • ½ tblesp freshly squeezed lemon juice
  • Grated zest 1-2 lemons
  • 3-6 drops Young Living Lemon Vitality Essential Oil
  • ½ tsp pure vanilla bean paste
  • ½ cup flaked or sliced almonds for decoration on top (or pecan nuts for a variation)

METHOD

  • Prepare the flax egg
  • Preheat oven to 175C/350F
  • Cover a large baking sheet with baking paper
  • In a mixing bowl, combine almond flour, arrowroot, baking soda and salt
  • In another mixing bowl, place nut butter, coconut oil, Young Living Blue Agave Nectar (or liquid sweetener of choice), coconut sugar, flax egg, lemon juice and zest and essential oil and whisk until super-smooth
  • Add the dry ingredients to the wet ingredients, stirring with a wooden spoon as you go, and stop when well combined and a sticky dough forms
  • Place the dough in the fridge to chill for 10-25 minutes
  • Scoop large spoonfuls and place each mound of dough 4-5cm/2” apart on the lined baking sheet.  The mixture makes around 12 bikkies at the optimal size
  • Lightly press sliced almonds or pecans into the tops of the cookies, using a bit more pressure if you’ve opted for the egg yolk option instead of the flaxseed ‘egg’ option
  • Bake 11-15 minutes until golden brown and set then remove and cool on tray for 5-10 minutes as they will be very soft
  • Transfer to a wire rack with a spatula and hang in there until cooled completely
  • Store in an airtight container.  Refrigerate after the first day if the weather is hot

You can use the recipe for these chewy morsels as a base and modify the Young Living Vitality essential oils as desired to add your own variations.  The lemon juice and zest in the recipe will combine beautifully with any of the citrus Vitality oils such as Tangerine.  And Young Living Ginger Vitality, Black Pepper Vitality and/or Lavender Vitality Oil would make deliciously distinctive variations, too.   Play around and you could come up with your own signature cookie (or bikkie as we like to call them in Australia).

Essential oils are potent, so as always, please follow directions on the bottle and the usual guidelines for safe use of authentic essential oils.  Most importantly, we reiterate to please only ever add essential oils to food or drink when their label clearly states you can do so.
