Doing some retro-themed entertaining? It seems not so long ago that the 1950s were retro. Now when people say ‘retro’, they are probably thinking 70s and 80s.  The great news is, you can blame it on the boogie without the embarrassment of wearing flares thanks to our Groovy Apricot Chicken Appetisers.

But before you do, let’s give you the good oil on these ‘golden eggs of the sun’, as the Ancient Greeks knew them.

Prunus armeniaca are a great source of vitamins A and C, both excellent for the skin in general. They contain lutein and zeaxanthin, a carotenoid which absorbs into the retina and is considered beneficial for eye health. Along with carrots, you can include apricots regularly for peeper support.

Apricots also contain a bunch of healthful phytochemicals and dietary fibre, and their balance of minerals helps maintain electrolyte balance in the body. More good news, as this helps your blood chemistry, muscle action and other processes.

If you’re eating them dried to get a concentrated source of vitamins and minerals, be sure to look for sundried ones that are free of sulphites if you’re sensitive to them. We’ve included both fresh and dried apricots in today’s recipe.

Commercially, both fruit and seed are used. High fives for reduction in wastage! The seeds are used to product apricot kernel oil, which is highly regarded for skin care. For optimal benefits, look for oil that is organic and cold-pressed so its beneficial constituents are retained. If you want to blend your own skin serum, adding skin-nourishing oils like sandalwood and geranium to apricot oil as a base is a nurturing all-rounder and great for minor irritations, too. Essential oils are potent, so as always, please follow directions on the bottle and the usual guidelines for safe use of authentic essential oils.

Groovy Apricot Chicken Appetisers

Ingredients (organic where possible)

  • 500 grams large fresh apricots, washed, halved and seeded
  • 1 large onion, peeled and finely diced
  • 1 large or 2 small Granny Smith apples, peeled and diced
  • 500 g chicken or turkey mince (free range and organic)
  • 70 g apricot fruit spread
  • 50 g dried apricots, chopped
  • 140 g tricolour rice – cooked
  • 400 ml water
  • 1 tsp Himalayan salt
  • generous sprinkle of ground cinnamon
  • 5 drops nutmeg essential oil* (adjust to suit your taste)
  • 3 tblsp cold-pressed virgin coconut oil
  • 2 tblsp tamari sauce
  • 2 tblsp balsamic vinegar
  • fresh mint for garnish

Brown the onion in coconut oil, add chicken mince and stir until browned.

Add tamari and balsamic vinegar. Stir well, cook for two minutes.

Add all other ingredients except the essential oil and fresh apricots.

Simmer over medium heat until a firm consistency is achieved. Turn off heat. Leave for five minutes, add essential oil and stir well. Cover and let stand.

To Serve Hot

Place halved apricots face down on hot BBQ or grill plate for two minutes. Place cut side up on a serving tray and fill the seed holes with warm chicken filling. Serve immediately with fresh mint garnish.

To Serve Cold

As above but don’t heat the apricots. Place on a tray in the fridge until chilled. Serve with fresh mint garnish.
